Can someone tell me in West Virginia, when will the workers comp start paying for my days off on comp? They told me after 3 days, but does that mean I will get paid for those 3 days if I am off 4+??

you'll have to ask them.
you'll get paid for the 3 day waiting period once you've been off a total of 7 days.
if you are only off 6 days you'll get paid for 3; if you are off 7 you'll get paid for all 7.

Do weekends (Saturday and Sundays) count in that time or is it Monday - Friday only? I got hurt at work on Monday 7/27 and hope to go back to work on Tuesday 8/4...Will that be considered 7+ days??

comp uses calendar counting as many employers have different work schedules.
