calling all good cooks!!!!!!!! we need a recipe of the week doner please
monster has let us know theres no cooking at her house none at mine either so how about it people (i know men can cook hubbie had to do ours before Bam got old enougth)so dig in those boxes and get out greatgrandma best and share with us .i love to collect when theres a name behind it

carrott cake i love /son had some squash i dont like it but sure others do i like to put them my kettle of green beens when they get done

Jayne , Because you asked, The best carrot cake I have ever tried.

Carrot Cake

1 1/4 cups wesson or crisco oil
2 c sugar
3 c carrots grated I use my blender with water and then drain well and measure.
4 eggs
2 c flour
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1 c chopped pecans

Mix sugar with oil and beat, Add carrots and beat. Add eggs one at a time and beat. Sift dryingrediants and add to to above and beat. Add pecans (optional) and mix well.

Bake in greased and floured pan in 350 degree oven for 45 to 60 min. Makes 3-8 inch layers or 9 by 13 pan. Cool

Cream cheese frosting

1 8oz. pkg cream cheese 1 stick marg
1 box powdered sugar 1 teaspoon vanilla
mix together and beat untill smooth and creamy then spread on cooled cake.........

I refrigerate my cake as it keeps longer and stays fresh.

Every time we had a pot luck or special ocassion at work, I was asked to bring my carrot cake, TE HE there loss. as I have never given this recipe to any one untill now. It is many years old from my x hubbys grandmother.
