Jayne , Because you asked, The best carrot cake I have ever tried.
Carrot Cake 1 1/4 cups wesson or crisco oil 2 c sugar 3 c carrots grated I use my blender with water and then drain well and measure. 4 eggs 2 c flour 2 teaspoons baking powder 2 teaspoons baking soda 2 teaspoons cinnamon 1 c chopped pecans Mix sugar with oil and beat, Add carrots and beat. Add eggs one at a time and beat. Sift dryingrediants and add to to above and beat. Add pecans (optional) and mix well. Bake in greased and floured pan in 350 degree oven for 45 to 60 min. Makes 3-8 inch layers or 9 by 13 pan. Cool Cream cheese frosting 1 8oz. pkg cream cheese 1 stick marg 1 box powdered sugar 1 teaspoon vanilla mix together and beat untill smooth and creamy then spread on cooled cake......... I refrigerate my cake as it keeps longer and stays fresh. Life isn't about waiting for the storm to pass. It's about learning to dance in the rain. |
