RE: a truckin' duck
Geese are more greasy than ducks, Ya have to parboil them first before cooking to get the grease out, They are good roasted ,on the grill etc. My dad was a hunter and I have eaten just about everything wild. Bear, deer, elk, pheasant, squirrel, coon, duck, goose, quail, you name it. And love most of it.. also fish, have any of you had a shore lunch? Fantastic eating.
