does anyone know?
Does anyone know how to make meatloaf out of deer? i can make almost anything out of deer but i cant make meatloaf out of it cause i cant make it stick together sence deer meat is so lean. my grandma used to make it all the time but she has passed and she never told me how to do it
grandma would never give me her cooking secrets lol

I've always used bread crumbs and eggs to get it to stick together but I don't use venison...but this might help alittle good luck, i also add onion and parsley in the mixture

Because it is so lean and hard to stick together, using eggs and bread crumbs like the rest said is the best thing to do. It will bind and you can form it into a loaf. I like to coat the bottom of a glass dish with non-sticking spray and form the meatloaf and add a strip of bacon or two on top for flavoring. I put eggs, breadcrumbs and parsley, salt and pepper and mix it all together. Cook and enjoy.

Hi Sis, Mix either Beef or Pork with Your Deer Meat, Usually 2/3 Deer and 1/3 the other, and then make Your Meatloaf as Usual!! Happy Eating!!

Still in Limbo has it exactly the way I do it 1/3 hamburger 2/3 venison. Make sure the ground beef has fat. This works really well and it is cheaper than lean beef. I made meatballs the other day and they were fantastic. I also make a sauce for on top of my meatloaf with 1/4 cup ketchup, 2 tablespoons brown sugar, 1 teaspoon DRY mustard. mix together and spread on meatloaf last 10 minutes of baking time.

Hi sis!
I add pork sausage to my burger meatloaf...try addin it to the venison along w/ all the other normal stuff like egg, breadcrumbs, a little milk and all the seasonings. Good luck! Are we all invited for din din? YUM! Lilly

Lilly, Instead of using bread crumbs use oatmeal, and eggs it binds the meat together I use green pepper ,onions, etc and make a paste like mixture of catsup, brown sugar and a little garlic salt for a tang and spread on top before baking.
