I make an awesome bread pudding! But I don't follow recipes. I'll have to see if I can find a recipe and switch it around to how I make it. I also love my sweet potato casserole, but I'll have to find a recipe to copy. I usually look at a recipe, but then I change it all around. I don't like to measure anything. I guess that's why I'm not the best baker in the world! Anyway, I'll see what I can find.

My aunt has a great recipe for the sweet potato casserole too, it is soooo good...I'll try and did it up and see if it's close to the one you saw....this could take a while...tho I've been looking for my mother in laws coconut cream pie....too

the sweet potatoe casserole is coming my aunt will email it to me tonight....but here is one of my favorites, and it has a great presentation

Cheddary Chicken and Broccoli

1 package of frozen puff pastry shells
2 jars (12 ounces each) golden chicken gravy
1 tablespoon of lemon juice
2 cups frozen broccoli cuts, thawed
2 cups cubed cooked chicken
1/2 cup shredded cheddar cheese (2 ounces)
1/4 cup home style sourdough cheese croutons, crushed

bake pastry shells according to package directions

in large saucepan mix gravy, lemon juice, broccoli and chicken, over medium heat, heat through, stirring occasionally

serve in pastry shells, sprinkle with cheese and top with crouton crumbs, you can also garnish with chives and fresh rosemary

makes 6 servings
bake time: 30 minutes
prep time: 15 minutes
cook time: 10 minutes

Sweet Potato Cranberry Knots

2 1/4 to 2 3/4 cups of gold metal better for bread flour
1/4 cup sugar ( I use splenda sugar/brown sugar for recipes) not as much tho
1 tsp salt
1/2 tsp ground cinnamon
1 package quick active dry yeast
1/4 cup butter or margarine, softened
3/4 cup mashed drained sweet potatoes packed i syrup (23 ounce can)
1/2 cup dried cranberries
butter or margarine melted
prep 30 min rise 2hr 10 min bake 20 min

1.mix 1 cup of the flour, sugar, salt, cinnamon and yeast in large bowl. add 1/4 cup butter and the water..beat with electric mixer on low speed 1 minute, scraping bowl frequently..add sweet potatoes. beat on medium speed 1 minute, scraping bowl frequently. Stir in cranberries and enough flour remaining flour, 1/2 cup at a time, to make dough easy to handle

2. place dough on lightly floured surface. knead about 5 minutes or until smooth and springy. place dough in large bowl greased with shortening,turning dough to grease all sides. cover and let rise in warm place 1 hr to 1hr 30min or until doubled.(dough is ready if indentation remains when touched)

3. heat oven to 375 spray cookie sheet with cooking spray. gently push fist into dough to deflate. divide dough into 12 equal pieces. Roll each piece into 8 inch rope; tie into knot. place on cookie sheet

4. brush knots with melted butter. cover and let rise in warm place about 40 minutes or until double..bake 14-20minutes or until golden brown. makes 12 rolls.

cranberry candle float (not to eat)
decoration only
fill a punch bowl or other wide mouthed low bowl with water, add approx. two 12 ounce bags of fresh cranberries and float candles amidst the berries and light....
really pretty
Orange-cranberry trifle
1 pkg 8oz cream cheese softened
1/2 cup sugar
1 tsp ground cinnamon
1 tsp pure orange extract, divided
2 cups thawed nondairy whipped topping
1 cup whole berry cranberry sauce
1 small loaf (10-12oz) pound cake thinly sliced
1/2 cup milk
1 tsp pure vanilla extract

mix cream cheese,sugar,cinnamon and 1/2 tsp orange extract with electric mixer on medium speed until smooth. gently stir in whipped topping and cranberry sauce. set aside

arrange 1/3 cake slices on bottom of 8 in square dish. mix milk vanilla and 1/2 tsp orange extract. drizzle approx. 2 tbsp of milk mixture over cake slices. spread 1/3 of cream cheese mixture over cake slices

repeat for 2nd & 3rd layers using remaining cake slices, milk and cream mixtures. sprinkle with sliced almonds and cinnamon. cover and refrigerae at least 2 or up to 24 hrs before serving. makes 8-10 servings.

Pork Chops with Gorgonzola and Pears
This is a wonderful recipe, beautiful when served.

Ingredients:
4 Pork chops ¾ to 1in. thick
2 tbsp olive oil
Sea salt, kosher salt(is what I use) or salt
2 med Ripe pears, peeled, cored. Each pear cut into 8 wedges
2 tbsp Butter
¼ cup Apple juice
¼ cup Whipping cream (heavy cream)
8 oz. Crumbled Gorgonzola (can use Blue cheese)
Fresh ground black pepper
Additional Gorgonzola, optional

Directions on next page
Directions:
1. Sprinkle chops with salt. In skillet cook chops in oil over med-high heat 5 minutes. Turn and cook 5 more minutes, or until juices run clear. Move to serving platter. Drain grease from pan.
2. In same pan, cook pear wedges in butter till brown, turning once. Add pears to platter.
3. For sauce, add juice and cream to skillet. Bring to boiling, reduce heat. Boil gently, 1-2 minutes, until slightly thickened. Add 8oz. Gorgonzola; whisk until cheese is almost melted. Remove from heat. Serve with pork and pears. Sprinkle with pepper, serve with additional cheese. Makes 4 servings.


PEACH CHEESE PIE


¾ cup flour
½ tsp. salt
1 tsp. baking powder
1 – 16 oz.can sliced peaches (undrained)
1 – 8 oz. cream cheese softened
¼ cup sugar
1 small box instant vanilla pudding
¾ cup milk
1 egg
½ cup sugar

TOPPING

1 TBL. sugar
½ tsp. cinnamon

Beat together flour, salt, baking powder and pudding mix, ¼ cup sugar, milk and egg.
Pour into greased 10” pie pan.
Drain peaches, reserving juice, place peaches over batter.

Beat together cream cheese, ½ cup sugar and 3 TBL peach juice. Beat until smooth.

Spoon cheese mixture over peaches to within 1 inch of the edge of pan.

Sprinkle topping over top of pie.

Bake 30 – 35 minutes at 350 degrees.

Done when golden brown. The center filling part (cream cheese layer) will still be soft. This pie cuts better after cooling



Oatmeal Cake Kaylyn 12/15/06

This is a good “carry cake” and excellent for breakfast. I love it with milk.

Ingredients:
1c Oatmeal (quick cooking)
1 stk Oleo
1 c Brown sugar
1 c White sugar
1 ¼ c Flour
1 tsp Baking soda
1 tsp Cinnamon
½ tsp Allspice
1/2 tsp Nutmeg
2 eggs

Directions:

Grease and flour cake pan. Mix by hand. Bake 35 mins at 350. Leave in pan to ice.

Icing:

¾ stk Sugar 1 c chopped pecans 1c coconut
¾ c Butter ¼ c milk ½ tsp vanilla

1. Heat butter, milk, and sugar over a slow flame and bring to a boil.
2. Add other ingredients, mix and pour over cake.
3. Bake under broiler til golden.

The good news is,"You can get used to anything."

sparky bake some cornbread and put lots of hot pepper seeds in it cool and feed to your chickens make sure also to give them at least 12 hrs of light even if you have to put a light in the henhouse........I jumpstart my chickens laying every year with this Hot cornbread recipe my granny gave me
